• 1.5kg beef brisket, boned
and rolled
• small bunch fresh
thyme, chopped
• small bunch fresh
rosemary, chopped
• 2 carrots, sliced
• 2 large onions, halved
and sliced
• 2-3 celery sticks,
finely chopped
• 3 garlic cloves, chopped
• 300ml red wine
• 600ml beef stock, made from
1 stock cube
• 25g mixed dried mushrooms
