Day 23: Christmas Drinks! Mulled Wine & Eggnog

Mulled Wine:
– 2 Bottles of Red Wine (Your favourite)
– 1 Orange
– 1 Lemon
– 1 Lime
– 3 Star Anise
– 2 Cinnamon Sticks
– 6 Cloves
– 1 Big Pinch of Black Pepper
– 200g Sugar
– 1/3 of a Nutmeg (finely grated)

– Slice all the citrus fruits and place to one side.
– Pour your red wine into a large saucepan and add all the other ingredients.
– Bring to a medium heat (steaming but not boiling), leave to steep for 10 mins with a lid on top and leave to cool.

– 6 Egg Yolks
– 150g Caster Sugar
– 500ml Whole Milk
– 300ml Double Cream
– 300ml Bourbon/Rum
– 1/2 Nutmeg (finely grated)
– 1/2 tsp Ground Cinnamon
– 1/2 tsp Ground Clove
– 1 Vanilla pod

– In a large metal bowl, whisk together the egg yolks and sugar until thick and foamy.
– In a saucepan, bring the milk, cream, vanilla, nutmeg, cinnamon and clove to a simmer; before slowly pouring into the egg and sugar mix whilst whisking continuously.
– Return the mixture to the pan and cook on a low heat, stirring continuously until thickened and glossy.
– Stir in your booze of choice then leave in the fridge to cool.
