What is Auxerrois? Wine laws in Alsace, France allow for the use of many different grapes in a bottle labelled Pinot Blanc. Winemaker Christophe Ehrhart talks from Biodynamic estate Josmeyer talks to askawinemaker about his “Cuvee des Printemps” which is labeled Pinot Blanc but actually contains 80% Pinot Auxerrois. He also explains what Auxerrois tastes like and why it is used as a blend.
