Amphorae are used for fermenting and aging wines by a small but growing number of natural wine makers around the world. Here, Fred Niger of Domaine de l’Ecu talks about how he uses two types of Amphora, one for fermentation and macerating the grapes on their skins and in part two he describes aging the wines in another vessel.
