Muscadet sur Lie is an appellation and a key to understanding how Melon de Bourgogne is transformed in the Loire Valley’s westernmost appellation. Fred of Domaine de L’Ecu talks about the role of lees in Muscadet and some of the history behind the winemaking technique. Lees are particles of dead yeasts formed after the fermentation, all the particles go to the bottom of the tank and are useful for wines like Muscadet.
