What is rootstock? The roots of American vines have been used since the late 1800’s to support Vitis Vinifera grape vines and protect them from Phylloxera, a louse that kills vines. It also is used to regulate the vigor of vines depending on the soil type in any given vineyard. Here, Nick Mills of Rippon explains, with a shout out to Rootstock Wine and Beer Bar in Chicago (where this was filmed) and the Rootstock Sydney festival (where he had just been before coming to Chicago.
