Remember the key to a good pairing is the balance between the dish and the wine varietal.

Also, pairing wine with food should be fun. As you learn more, you can experiment more based on the preferences of your pallet. Basically, that means you can break the rules, eat and drink what you want.

You want to match the wine with the most prominent flavor of the dish.

What’s in your mouth before you taste wine will impact how a wine tastes.

Be aware of these types of pairings:

Congruent pairings are pairing wines with the same flavored food ex. Sweet Riesling with a sweet dessert. Usually, red wines result in congruent pairings.

Complimentary pairings are pairings that do not have any common flavors but complement each other ex. Chardonnay with salty popcorn. Usually, white wine choices result in complementary pairings.

Our Favorite Rules for Pairing Food with Wine

Wine should have the same flavor intensity as the food
The food and wine should complement one another
You don’t want your food or wine to cover up the flavors of one another
Red wines pair well with bold meats
White wines pair well with light meats
Pair the wine with the sauce or seasoning, not the meat
ex. Shrimp Scampi – pair with the buttery sauce rather than the shrimp
Pair sweet wine with sweet food
The wine should be sweeter than the food
Not champagne and cake because the cake is much sweeter than a dry wine
Sweet wine pairs well with spicy food
The sweetness in the wine complement the spices used in various dishes
Salt and fat pair great with most wine
Especially wine with tannins
Ex. Potato chips taste great with most wine!
Pair wines and foods from a similar region
Ex chianti and spaghetti
Tannins pair well with fat
