Why do you whole cluster press Pinot Noir?

Pinot Noir can be fermented with its whole cluster, i.e. the berries and the stems together in order to create a more complex, interesting wine. Brianne Day of Day Wines in Portland discusses why she chooses to ferment with whole clusters and use native yeasts in here winemaking.
