Pineapple glaze recipe;


• 500g fresh pineapple cubes
• 200ml pineapple juice
• 100g sugar
• 30ml cognac (optional)
• 60ml white wine (optional)
• 3 tablespoon cornstarch
• 1 tablespoons minced onion
• handful fresh thyme
• 20g butter
• 2 tablespoons honey-Pommery mustard
• 30ml fresh lemon juice


1. Heat the saucepan, add butter, fresh pineapple, sugar, then and finely chopped onion. Cook over medium heat, stirring occasionally, until the mixture starts to caramelized.
2. Add cognac, flambé the pineapples. Add white wine and let simmer. Then add the pineapple juice.
3. Keep cooking over 10 minutes. Then add honey-Pommery mustard. Keep in slow fire.
4. In a small bowl, mix cornstarch with 1-2 tablespoons of cold water until smooth.
5. Gradually stir the cornstarch mixture into the simmering pineapple mixture.
6. Cook, stirring constantly, until the sauce thickens, usually about 2-3 minutes.
7. Season with lemon juice.
8. Remove from heat and let the sauce cool slightly.
8. Grill or cook your pork chops, tenderloin, or any other pork cut of your choice according to your preferred method.
9. Serve the cooked pork with the pineapple sauce drizzled over the top, or serve the sauce on the side as a dipping sauce.
