Barcelona Wine Bar’s Gretchen Thomas takes us on an exploration of southern Spain, which many visitors consider the soul of Spain. Sparsely populated, it is known for its hot & dry landscape, chalky soils and bold flavors of both wines and food.

You’ll learn more about the history of sherry, what it is and how it’s made, and why sommeliers sing its praises for food pairings. This part of Spain is known as jamon and olive oil country, and Chef Derek Simcik of Barcelona Wine Bar prepares Salmorejo (a special gazpacho from Andalucia, Spai) along with a plate of Spain’s treasured artisanal cured Jamón.
